After a transformational redesign, OSTRA offers a contemporary dining experience focusing on reimagined Costa Rican flavors transformed by global culinary techniques.  The open-air restaurant offers a cocktail lounge and terrace overlooking Culebra Bay.  

Experience Perla, our sushi bar, which operates Tuesday through Friday based on product availability.

Chao Pescao offers open terraces, tall wooden ceilings and a warm and lively atmosphere. Indulge in a tapas menu that will embark you into a journey through Latin America and the Caribbean.  If you are looking for a bar for a pre or post dinner drink, Chao is your place. In addition to a creative mixology menu, the beverage list features extensive Central American liquors and Costa Rican craft beers.

Our sunrise-to-sundown gathering place is the central hub of the resort.  Perched above our main pool area, offering stunning views of Culebra Bay, Rio Bhongo is open for breakfast, lunch, and dinner.  Our expert barista with an extensive coffee program will wake you up in the morning, continental and local favorites will comfort you for lunch and dinner.

MEET OUR CHEFS

EXECUTIVE CHEF FROYLAN RAMOS

Froylan has worked in luxury resort culinary operations for over 15 years. His culinary philosophy has been inspired by different cultures, new techniques and flavors that have allowed him to create extraordinary new twists on modern Mexican cuisine.  Diverse assignments throughout Mexico and the Caribbean have contributed to his comprehensive knowledge of international cuisines spanning the globe.

Born in Mexico City, Froylan received his culinary education in his hometown and completed his internships in the prestigious Club de Industriales Mexico & the awarded La Broche Restaurant in Madrid, Spain. In his spare time, Chef Ramos enjoys visiting local markets, paddle boarding on the ocean and training crossfit.

EXECUTIVE SOUS-CHEF BRUNO ALVES

A Brazilian with Italian and Spanish roots, Bruno Alves’s unique background and his family’s love of food inspired and defined his passion for cooking. Bruno developed his culinary point of view in Italy, working for two of the country’s finest restaurants, focusing on the seasonality of products, craft, and quality, which he continues to believe today. Many awards later, including a coveted Bib Gourmand, Michelin’s award for exceptional yet affordable dining, he arrives in Costa Rica to lead our newly renovated OSTRA.

Bruno plans to mingle with locals to familiarize himself with his new home. “To learn about cultures, you must learn about food and music. Both come from the mouth,” he says. What is his perfect idea of happiness? Spearfishing followed by a nice meal and a good glass of wine. And as luck would have it, he finds it all here on Peninsula Papagayo.
