Meet Dhani

Born in India and raised in Chile, Chef Inderpal Dhani brings a global perspective to the kitchen, shaped by his experiences across Asia, the Middle East, the Caribbean, and South America. Having led kitchens at Moskito Island and Necker Island, Sir Richard Branson’s private retreats, as well as luxury brands like Mandarin Oriental and Grand Hyatt, he is known for his ability to blend tradition with innovation. Now at Ostra, he reimagines Southeast Asian cuisine, honoring its rich flavors while integrating the finest Costa Rican ingredients. 

 

With a deep respect for technique and authenticity, his vision elevates Ostra into a destination
where bold flavors, thoughtful craftsmanship, and immersive dining come together.
